Appetizers

The wider the variety of tastes you offer, the more your guests will consume. The following suggestions will help guide you in the right direction.

  • For appetizers preceding a meal, there should be least four different tastes (six to eight per person). Usually this event will last no more than one hour.
  • When appetizers are the only food offered at a two to three hour reception there should be a least six tastes (twelve to fifteen per person).
  • To calculate for appetizers not in pieces (i.e., cheese and dips) assume one ounce is equal to one piece.
  • Make sure you create a balance between hot and cold selections.
  • Plan a balance between individual bites versus platter presentations.
  • After careful calculations consider adding nibbles like exotic nuts or marinated olives
  • Consider station are "hand passed" service. Hand passed will require service staff at hourly rates.
